This is one of the finest of Spanish hams – Jamon Iberico. These are Iberico pigs from Guijuelo near Salamanca. This is a fully acorn-fed 100% ( bellota fed ) Iberico-breed ham, cured for 42-48 months to achieve the maximum flavor and melt-in-the-mouth texture. The judges in the campaign said it was good looking with a nice fat layer and even marbling, Intense flavor, good balance of salt and sweetness.
The color of Iberian Ham (Jamon Iberico) is purplish red. It has a slightly fibrous texture and fat infiltration. The combination of the delicate flavor and intense aroma of this delicious food, makes it an attractive, indispensable product in every good gourmet table.
